She attributes her success in losing more than six stone to this diet, all without resorting to expensive alternatives.


Emma Logsdon, known as Em, faced challenges with weight fluctuations due to a medical condition for years, weighing 15st 4lb in 2021.
After committing to exercise and eventually embracing healthier eating habits, she transformed her diet.
The foundation of her remarkable six-stone transformation was a consistent, uncomplicated “daily lunch,” which she proudly claims is highly effective and costs only £1.31 per serving.
Em emphasizes that her meal is not only quick to prepare but also exceptionally budget-friendly.
In a viral TikTok video that has amassed over a million views, she outlines the details: “Two-minute lunch. 40g protein. Just £1.31.”
To create her economical bowl, Em begins with a large bowl on a food scale to ensure accurate measurements.
She adds 110g of pre-cooked white jasmine rice and 81g of green beans.
The true time-saver is the chicken: “All you need to do is take chicken breast, cut it into small pieces, season it to your liking, and then pop it in the air fryer,” she suggested.
Once the ingredients are in the bowl, the final step is a quick spin in the microwave for about a minute, finishing the dish with a few slices of avocado.
The final nutritional breakdown is: 472 calories, 40g of protein, and just £1.31 per serving – calculated by dividing the cost of the bulk ingredients.
This results in a simple yet high-protein recipe.
Em also clarified that the meal includes four ounces of chicken – a standard serving size – which contributes the majority of the 40g of protein.

“It was never an easy choice for me to start Mounjaro. However, as someone who has been a yo-yo dieter for most of my adult life, I felt that the injections were my last hope.
“I had approached the GP to inquire about the possibility of starting the injections through the NHS, but was informed that there was no chance until June 2025, and even then, it would come with strict criteria for approval.
“So, I opted to pay for the injections myself. They weren’t cheap, but I rationalized the expense by comparing it to the amount I would typically spend on junk food and takeaways each month.
“One aspect I hadn’t anticipated was that the injections become even more expensive with higher dosages. While the initial loading dose of 2.5mg was manageable monthly, escalating to 12.5mg – the highest dose I reached during my Mounjaro journey – became prohibitively expensive.
“Despite that, I was determined to continue with the injections, as I was fearful of regaining the weight once I stopped. I had intended to remain on the injections for life, had I been permitted and could afford it.
“However, that was not a feasible option amid the price increase. Fortunately (at least now I believe it was fortunate), I had to discontinue Mounjaro for health reasons at the beginning of July.
“Had I still been on the injections, I can confidently say that the news of the price hike would have significantly impacted my mental well-being – as it has for many others. I wouldn’t have been able to afford the monthly injections, and the decision to stop would have been taken out of my hands entirely.
