The star of Channel 5’s Air Fryer series and author of popular cookbooks, including her latest The Ultimate Air Fryer Cookbook: 15-Minute Feasts (Michael Joseph), is offering us an early Christmas treat.

Her new cookbook is filled with flavorful family meals – think stews and takeout-style dishes that everyone will enjoy – along with ultra-quick meals for two that will eliminate any cravings for takeout.

By now, you’re aware that air fryers can do much more than just cook fries and chicken nuggets, but Clare’s recipes will further expand your culinary horizons.

We’ve selected three of our favorite recipes to share with you, including a fantastic date-night dinner that requires just 5 minutes of hands-on time.

Additionally, this hearty sausage stew is a delicious weeknight comfort dish, and you must try the spicy prawn pizza!

Sticky Pork Belly & Golden Vegetable Rice

Serves: 2
Prep time: 5 mins
Cooking time: 15 mins

Ingredients:
*3 tbsp soy sauce
*1 tsp ginger paste
*1 tbsp runny honey
*1/2 tsp miso paste
*1/2 tsp lemongrass paste
*2 tbsp teriyaki sauce, plus extra for serving
*500g pork belly slices
*250g packet microwavable golden vegetable rice
*Chopped spring onions

Method:
1. In a large bowl, mix the soy sauce, ginger paste, honey, miso paste, lemongrass paste, and teriyaki sauce until you achieve a smooth paste.
2. Place the pork on a cutting board and pat dry with kitchen paper (this step is crucial for achieving extra-crispy skin). Brush each piece with the Asian-style paste, then rub with vegetable oil. Sprinkle coarse sea salt on the fatty edges of each slice to draw out moisture and create that delightfully crispy skin.
3. Put the pork in your air fryer basket, skin-side up, making sure they are not overcrowded. Cook at 200°C for 15 minutes, turning halfway through. Once cooked, carefully take the pork out of the air fryer and let it rest for a couple of minutes before slicing it into bite-sized pieces.
4. While the pork is resting, prepare the rice according to the packet instructions.
5. To serve, divide the rice between your bowls and top with the pork. Drizzle with extra teriyaki sauce and sprinkle with the chopped spring onions.
