Sticky Pork Belly & Golden Vegetable Rice
Serves: 2
Prep time: 5 mins
Cooking time: 15 mins
Ingredients:
*3 tbsp soy sauce
*1 tsp ginger paste
*1 tbsp runny honey
*1/2 tsp miso paste
*1/2 tsp lemongrass paste
*2 tbsp teriyaki sauce, plus extra for serving
*500g pork belly slices
*250g packet microwavable golden vegetable rice
*Chopped spring onions
Method:
1. In a large bowl, mix the soy sauce, ginger paste, honey, miso paste, lemongrass paste, and teriyaki sauce until you achieve a smooth paste.
2. Place the pork on a cutting board and pat dry with kitchen paper (this step is crucial for achieving extra-crispy skin). Brush each piece with the Asian-style paste, then rub with vegetable oil. Sprinkle coarse sea salt on the fatty edges of each slice to draw out moisture and create that delightfully crispy skin.
3. Put the pork in your air fryer basket, skin-side up, making sure they are not overcrowded. Cook at 200°C for 15 minutes, turning halfway through. Once cooked, carefully take the pork out of the air fryer and let it rest for a couple of minutes before slicing it into bite-sized pieces.
4. While the pork is resting, prepare the rice according to the packet instructions.
5. To serve, divide the rice between your bowls and top with the pork. Drizzle with extra teriyaki sauce and sprinkle with the chopped spring onions.
